Pdf El Zea mays spp es un cereal muy abundante a nivel mundial; el maíz en Ecuador se lo consume en torta, tortilla, humitas, mazamorra, torrejas y ensaladas, incluso el choclo es muy común al ingerirlo directamente después de hervirlo; sin embargo, su barba suele ser desechada junto con la mazorca. Esto constituye un desperdicio de una parte útil de este cereal. Por ello es necesario determinar la concentración de polifenoles totales y la actividad antioxidante en la barba de choclo (Zea mays spp.) en extracto acuoso. Se procedió a cuantificar la concentración de Polifenoles Totales en la barba de choclo serrano con un resultado de 71,40 mg GAE/100g y en la barba de choclo costeño 0,020 mg GAE/100mg por el método de Folin Ciocalteu. Se evaluó la Actividad Antioxidante por el método DPPH en el choclo serrano con un valor de 72.37% y en el choclo costeño con un valor de 130,35%. La barba del choclo serrano tiene mayor contenido de Polifenoles Totales mientras que la Actividad Antioxidante de la barba de choclo costeño es más elevada. Zea mays spp. is a very abundant cereal worldwide; corn in Ecuador is consumed in cake, tortilla, humitas, mazamorra, torrejas and salads, even, the corn is very common when ingested directly after boiling it; however, is usually discarded with the cob. This constitutes a waste of a useful part of this cereal. Therefore it is necessary to determine the concentration of total polyphenols and the antioxidant activity in the beard of corn (Zea mays spp.) in aqueous extract. The concentration of Total Polyphenols in the Highlands corn was quantified with a result of 71.40 mg GAE / 100g and in the coastal corn beard 0.020 mg GAE / 100mg by the Folin Ciocalteu method. The Antioxidant Activity was evaluated by the DPPH method in the mountain corn with a value of 72.37% and in the coastal corn with a value of 130.35%. The serrano corn beard has a higher total Polyphenol content the Antioxidant Activity of the coastal corn beard higher. |
