Pdf La presente investigación consistió en evaluar las características fisicoquímicas y microbiológicas del hongo Pleorotus ostreatus, y dar solución a la problemática del desconocimiento y búsqueda de nuevas fuentes alimenticias, en Ecuador sólo un 2% pertenecen a cultivos nacionales y el consumo es muy bajo. Los hongos del género Pleurotus son los más fáciles y menos costosos de producir, debido a la alta adaptabilidad y productividad, además tienen la habilidad de crecer en diferentes sustratos. Para la investigación se recolectó la muestra fresca en la granja Intiwasi ubicada en Quito – parroquia Tumbaco, se realizó su respectiva verificación taxonómica y se analizaron las principales propiedades fisicoquímicas (humedad, proteína, grasas, ceniza, fibra, pH y acidez) y las propiedades microbiológicas (mohos, levaduras, aerobios mesófilos, coliformes fecales, coliformes totales y salmonella) efectuado por medio de las técnicas correspondientes, obteniendo como resultados valores significativos en proteínas un 3,75% y humedad un 85,94%; en los estudios microbiológicos se considera un alimento inocuo para su consumo debido a su ausencia de microorganismo como la Salmonella. Por lo tanto, mediante este estudio podemos determinar la importancia del consumo del hongo ostra gris, con un gran aporte en la dieta diaria de la sociedad. The present investigation consisted of evaluating the physicochemical and microbiological characteristics of the Pleorotus ostreatus fungus, and solving the problem of ignorance and search for new food sources, in Ecuador only 2% belong to national crops and consumption is very low. Fungi of the genus Pleurotus are the easiest and least expensive to produce, due to their high adaptability and productivity, they also have the ability to grow on different substrates. For the research, the fresh sample was collected at the Intiwasi farm located in Quito - Tumbaco parish, their respective taxonomic verification was carried out and the main physicochemical properties (humidity, protein, fat, ash, fiber, pH and acidity) and the microbiological properties (molds, yeasts, aerobes) were analyzed. mesophiles, fecal coliforms, total coliforms and salmonella) carried out by means of the corresponding techniques, obtaining significant values in protein of 3.75% and humidity of 85.94%; In microbiological studies it is considered a safe food for consumption due to its absence of microorganisms such as Salmonella. Therefore, through this study we can determine the importance of consuming the gray oyster mushroom, with a great contribution to the daily diet of society. |
