Pdf En Ecuador la arveja es muy apetecida debido a sus grandes fuentes de proteínas, fibras, carbohidratos, vitaminas y minerales, es libre de gluten por lo cual puede ser ingerida por personas que sufran de diabetes y su principal característica es por su gran contenido de fibra dietética. En el caso la vaina de arveja (Pisum sativum) su peso representa el 40% del peso total, que se desechan como desperdicio pudiendo darle un valor agregado. En el Tamizaje Fitoquímico Preliminar se encontraron los metabolitos secundarios alcaloides, saponinas, flavonoides, taninos y triterpenoides. Se determinaron polifenoles totales por el método de Folin-Ciocalteu obteniendo resultado en el extracto acuoso de 17 mgGAE/g y en extracto etanólico de 19 mgGAE/g. Y en actividad antioxidante por el método DPPH se obtuvo un IC50 en el extracto acuoso de 0.033 mgGAE/g y el extracto etanólico 0.004 mgGAE/g. Donde el extracto etanólico presento mejor actividad antioxidante. In Ecuador, the pea is very popular due to its great sources of proteins, fibers, carbohydrates, vitamins and minerals, it is gluten-free so it can be ingested by people suffering from diabetes and its main characteristic is its high fiber content dietetics. In the case of the pea pod (Pisum sativum) its weight represents 40% of the total weight, which is discarded as waste and can give it added value. In the Preliminary Phytochemical Screening, the secondary metabolites alkaloids, saponins, flavonoids, tannins and triterpenoids.
