Pdf En el presente estudio se realizó análisis fisicoquímicos y específicos para determinar la capacidad antioxidante en diferentes tiempos de fermentación (8,16, y 24 horas). Utilizando una relación inicial de 1/10 en leche descremada UHT a temperatura ambiente. Por lo que se determinó pH, tasa de crecimiento de biomasa, acidez titulable y para la determinación de la actividad antioxidante se fundamentó mediante FRAP y DPPH. Obteniendo como resultados una tasa de biomasa con un crecimiento no exponencial, el pH que disminuye en función del tiempo por lo cual su acidez titulable se ve aumentada, y en la capacidad antioxidante para DPPH- presenta diferencias significativas de 9.347, 0.390 µM/100 mL de trolox, obtenidas a las 8 y 16 horas fermentación, en cuanto al poder reductor de hierro medido por el método de FRAP fueron concentraciones de 18.0625 y 5.5625 µM de FeSO4 obtenidas a las 8 y 16 horas de fermentación. In this study, physicochemical and specific analyzes were carried out to determine the antioxidant capacity at different times of fermentation (8, 16, and 24 hours).
