Pdf El presente trabajo de investigación se enfoca en evaluar la capacidad antioxidante en las hojas de la coliflor (Brassica oleracea L. var. Botrytis) que es una especie de origen asiático el cual se ha extendido mundialmente, en Ecuador se la encuentra en la región Sierra. Cabe mencionar que existen estudios acerca de la parte comestible mas no de las hojas, se empleó un extracto hidroalcohólico 75:25% (etanol:agua) por maceración durante 6 días, luego se realizó la determinación de actividad antioxidante mediante el secuestro de radicales libres del DPPH (2,2- difenilpicrilhidrazil), por espectrofotometría a 515nm, se obtuvieron las absorbancias y se realizaron los cálculos para porcentaje de inhibición (88,2%) y mediante la ecuación de la recta se obtuvo el IC50 del extracto de las hojas (2,23 ug/mL) de la misma forma se ejecutó el cálculo para el IC50 de los estándares de ácido gálico (1,57 ug/mL) y de ácido ascórbico (2,15 ug/mL) siendo el IC50 del extracto cercano a los estándares. Finalmente se puede apreciar que el extracto de Brassica oleracea L. var. Botrytis demuestra una capacidad antioxidante satisfactoria tanto con los estándares como con otras especies, se puede concluir que esta hortaliza tiene capacidad antioxidante y puede ser aprovechada para posteriores estudios. The present work of investigation focused on the evaluation of the antioxidant capacity in leaves of cauliflower (Brassica oleracea L. var. Botrytis), which is a vegetal species of Asian origin which has been extended worldwide, in Ecuador it is found in the highlands. It is worth to mention that there are studies related to the edible part but there are not studies associated to the leaves, a hydroalcoholic extract 75:25% (ethanol: water) has been used for maceration during 6 days, then the determination of antioxidant activity was made by means of the sequestration of free radicals of DPPH (2.2 diphenylpicrylhydrazil), by spectrophotometry at 515nm, the absorbances were obtained and the calculations for percentage of inhibition were made (88, 2%) and by means of the equation of the line, the IC50 of the extract of the leaves (2.23 ug/mL) was obtained in the same way the calculation for the IC50 of the gallic acid standard (1.57 ug/mL) ,for the ascorbic acid standard (2.15 ug/mL) was executed, being the IC50 of the extract close to the standards. Finally, it can be appreciated that the extract of Brassica oleracea L. var. Botrytis shows a satisfactory antioxidant capacity both with the standards and with other species, it can be concluded that this vegetable has antioxidant capacity and can be used for further studies. |
