The search for natural sources of bioactive compounds with nutritional interest has received widespread attention. Microalgae represent one of the sources that are being most studied due to the high number of nutritional compounds within their structure. Moreover, research on this field has explored the valorisation of residues from mainstream processes. Some of these interesting compounds highlighted with nutritional benefits include antioxidants, phenolic compounds and mono (MUFAs), and polyunsaturated fatty acids (PUFAs).
