To the north of the country of Pichincha, in Ayora, canton Cayambe was formed the Federation (before Union) of Popular Organizations of Ayora-Cayambe, UNOPAC some years ago. Ten communities, six neighborhoods and an association of women are affiliated to the organization. The members of the communities are rural people of the region that have, most of them, their properties in the skirts of the mount called Cajas that it is between the country of Pichincha and Imbabura toward the north. The organization UNOPAC has a factory that turns grain to obtain flour, and especially the flour of a traditional meal in the area, called "Uchujacu". For Uchujacu, they are needed six vegetable species at least: corn (Zea mays), barley (Hordeum vulgare), wheat (Triticum vulgare), pea (Pisum sativum), lentil (Lens culinaris) and bean (Vicia faba).
Al norte de la provincia de Pichincha, en Ayora, cantón Cayambe se formó hace algunos años la Federación (antes Unión) de Organizaciones Populares de Ayora-Cayambe; UNOPAC. Diez comunidades, seis barrios y una asociación de mujeres son afiliados a la organización. Los miembros de la comunidades son personas campesinas de la región, que tienen, en su mayoría, sus propiedades en las faldas del monte llamado Cajas que se encuentra entre las provincias de Pichincha e Imbabura hacia el norte. La organización UNOPAC cuenta con una planta procesadora de granos para obtener harina y en especial la harina para una colada tradicional de la zona, llamada "Uchujacu" . Para el Uchujacu se necesitan al menos seis vegetales: maíz (Zea mays), cebada (Hordeum vulgare), trigo (Triticum vulgare), arveja (Pisum sativum), lenteja (Lens culinaris) y haba (Vicia faba).
